Start your morning with this hearty vegan sausage and hash brown skillet. This one-pan meal pairs crispy shredded potatoes with savory peppers and seitan for a protein-packed brunch. It is a flavorful essential for a modern vegan lifestyle, delivering satisfying textures and robust aromas in every single bite.
Step 1. Shred the russet potatoes using a box grater and immediately place them in a clean kitchen towel. Wring the towel tightly over the sink to squeeze out as much liquid as possible; removing this excess starch and moisture is the most critical step to ensure the potatoes fry to a crisp rather than steaming into a mushy texture.Heat 2 tablespoons of avocado oil in a large cast-iron or heavy-based skillet over medium-high heat.
Add the sliced seitan sausages to the pan. Sauté for 4-5 minutes until they develop a dark, caramelized crust on both sides, which enhances the savory depth of the dish. Remove the sausages from the pan and set aside.
Add the remaining tablespoon of oil to the same skillet. Spread the dried shredded potatoes in an even layer across the bottom. Press down firmly with a spatula to ensure maximum surface contact with the heat. Let them cook undisturbed for 6-8 minutes until the bottom is deeply golden and rigid.
Flip the potatoes in sections. Scatter the diced onion and red bell pepper over the top.
Sprinkle the smoked paprika, turmeric, and nutritional yeast over the mixture. We bloom the nutritional yeast in the residual oil of the pan to activate its nutty, savory profile, which provides the foundational umami for the potatoes.

Notes
Always use a heavy skillet like cast iron; it retains heat much better than thin pans, which is essential for getting that hard sear on the potatoes.
Do not salt the potatoes while they are raw or during the initial frying phase; salt draws out moisture which will make the hash browns soggy.
Seitan is used here as a primary protein source because its dense, gluten-based structure provides a satisfying chew that mimics traditional farmhouse textures without losing its shape during high-heat frying.
If the potatoes are sticking, it usually means they aren't finished browning yet; they will naturally release from the pan once a proper crust has formed.
