Method

  1. Press the firm tofu between two heavy plates or a tofu press for at least 15 minutes. Removing this moisture is vital because it allows the tofu to sear and develop a firm, chewy texture rather than boiling in its own liquid.

  2. Heat one tablespoon of oil in a large skillet over medium heat. Add the red onion and bell pepper, sautéing for 5 minutes until the vegetables have softened and the onions are translucent.

  3. Crumble the pressed tofu into the skillet using your hands to create irregular, rustic pieces. Sprinkle the nutritional yeast, turmeric, smoked paprika, and kala namak over the tofu. Blooming the nutritional yeast and spices in the heat of the pan is essential to release their full savory aroma and nutty depth.

  4. Toss the tofu with the vegetables and cook for another 5-7 minutes. Use a spatula to press the tofu into the pan occasionally to encourage light browning.

  5. Stir in the rinsed black beans and cook for 2 minutes just until they are heated through. The beans add a hearty, earthy contrast to the spiced tofu.

  6. Warm the flour tortillas in a separate dry pan or over a gas flame for 30 seconds per side until they are soft and pliable.

  7. Spoon the tofu and bean mixture into the center of each tortilla. Top with fresh avocado slices and a generous dollop of salsa.

  8. Fold the sides of the tortilla inward, then roll from the bottom up to seal the burrito. Serve immediately while warm.

Notes

Pressing the tofu for longer (up to 30 minutes) will result in an even firmer texture that mimics the bite of a traditional breakfast scramble.

Kala namak is a volcanic rock salt that contains sulfur, which is the key to achieving that classic savory breakfast aroma.

For a crispier burrito, place the rolled burrito back in the skillet for 1 minute per side after assembly to toast the tortilla.

The combination of firm tofu and black beans provides 22g of high-quality plant protein, offering a dense, satisfying texture that keeps you energized.

Questions

Can I make these burritos ahead of time?
Yes, you can prepare the filling in advance and store it in the fridge for up to 4 days. Assemble and warm the burritos just before serving for the best texture.
What is the best way to press tofu without a tofu press?
Wrap the tofu block in a clean kitchen towel, place it on a plate, and set a heavy object like a cast-iron skillet or a couple of canned goods on top.
Can I use different beans?
Absolutely. While black beans are traditional, pinto beans or even chickpeas work well in this savory spice blend.
Why is my tofu scramble watery?
This usually happens if the tofu wasn't pressed long enough or if the heat was too low. Ensure you press the tofu well and use medium-high heat to evaporate any remaining moisture.
