These smoky air-fryer chickpeas are a staple in any modern vegan kitchen, offering a satisfying crunch without the wait of oven roasting. By removing moisture and using high heat, this recipe creates a protein-packed snack that stays crisp for days, making it the perfect addition to your plant-based meal prep.
Step 1. Drain the cooked chickpeas into a colander and rinse them thoroughly under cold water to remove any excess starch or canning liquid.Transfer the chickpeas to a clean, lint-free kitchen towel and pat them until they are completely dry. This technique matters because moisture is the enemy of a crunchy texture; if the chickpeas are even slightly damp, they will steam in the air fryer rather than crisping up. If any skins come loose during this process, simply discard them as they can burn easily.
Preheat your air fryer to 400°F (200°C).
In a medium bowl, toss the dried chickpeas with the extra virgin olive oil until every bean is evenly coated. Do not add the spices yet.
Place the chickpeas in the air fryer basket in a single layer. Cook for 12 to 15 minutes, shaking the basket every 5 minutes to ensure even heat distribution.
While the chickpeas are cooking, mix the smoked paprika, ground cumin, garlic powder, onion powder, sea salt, and cayenne pepper in a small bowl.
