Step 1. Place the walnut halves in a dry skillet over medium heat. Toast them for 3-5 minutes, tossing frequently, until they become fragrant and slightly darkened. This technique is vital because toasting releases the natural oils within the walnut, removing raw bitterness and creating a deep, savory base for the filling.Transfer the toasted walnuts to a food processor and pulse 5-7 times until they reach a coarse, crumbly consistency. Avoid over-processing into a paste; you want distinct pieces to provide a meaty bite.
In a large skillet, sauté the diced red onion with a splash of water or oil until translucent. Stir in the tomato paste, smoked paprika, cumin, and chili powder, cooking for 2 minutes to wake up the dried spices.
Add the cooked brown lentils and the pulsed walnuts to the skillet. Stir well to coat the ingredients in the spice mixture.
