This vegan one-pot coconut chickpea curry is a flavorful staple for any plant-based kitchen. By simmering hearty legumes in a fragrant, spiced coconut milk base, you create a rich and satisfying dinner. It is the perfect solution for those seeking a quick, nutrient-dense meal that never sacrifices depth of flavor.
Step 1. Heat the coconut oil in a large pot or Dutch oven over medium heat. Add the diced yellow onion and sauté for 5-7 minutes until softened and translucent.Stir in the minced garlic and grated ginger. Cook for 1 minute until fragrant but not browned.
Add the ground turmeric, cumin, coriander, and red chili flakes. Bloom the spices in the oil for 30-60 seconds, stirring constantly. Blooming the spices in hot fat is a critical step because it toasts the raw powders and releases their fat-soluble essential oils, resulting in a significantly more complex and aromatic flavor profile.
Add the drained chickpeas and stir to coat them thoroughly in the spice paste. This briefly sears the outside of the chickpeas, helping them hold their shape.
Pour in the full-fat coconut milk and add the sea salt. Stir well to combine, making sure to scrape up any browned bits from the bottom of the pot.
Bring the mixture to a gentle simmer. Reduce the heat to low and cook uncovered for 15-20 minutes. Simmering allows the coconut milk to reduce and thicken naturally while the chickpeas absorb the spices.
Add the fresh baby spinach and stir until it is just wilted. This should only take about 1-2 minutes; do not overcook the greens to preserve their color and nutrients.
Remove the pot from the heat and stir in the lime juice. The acidity cuts through the richness of the coconut milk to balance the dish.

Notes
For a thicker sauce, use a wooden spoon to smash a handful of chickpeas against the side of the pot halfway through simmering.
Always use full-fat coconut milk for this recipe; the higher fat content provides the necessary mouthfeel and carries the heat of the spices better than lighter versions.
If you prefer a smokier flavor, add half a teaspoon of smoked paprika during the spice-blooming stage.
