Method
This high-protein chickpea scramble is a staple for any modern vegan kitchen, offering a satisfying texture that pairs perfectly with sautéed kale and peppers. By combining smashed legumes with crumbled tofu, you create a hearty meal that provides plenty of fuel to power through your busiest mornings with ease.
Step 1. Press the firm tofu for at least 15 minutes before starting. Pressing tofu is essential because it removes excess water, allowing the tofu to absorb the savory flavors of the spices and develop a firmer, more satisfying texture during the browning process.In a large bowl, add the drained chickpeas and use a potato masher or fork to roughly smash about half of them. This creates a variety of textures, from whole bites to a creamy base that binds the scramble together.
Crumble the pressed tofu into the bowl with the chickpeas and stir to combine.
Heat the olive oil in a large skillet over medium heat. Add the diced bell peppers and sauté for 5 minutes until softened.
Push the vegetables to the side and add the nutritional yeast and ground turmeric directly into the warm oil. Blooming the nutritional yeast and turmeric in oil for 30 seconds is a critical step; it toasts the yeast to unlock a deep, nutty umami and activates the earthy notes of the turmeric.
Add the chickpea and tofu mixture to the skillet, stirring well to coat everything in the bloomed spices.
Pour in the soy milk and add the chopped kale. Cook for another 5-7 minutes, stirring frequently, until the kale has wilted and the liquid has mostly absorbed, leaving a moist but set consistency.
Turn off the heat and stir in the kala namak. This salt provides the distinct sulfurous profile that defines the flavor of the dish.
Serve immediately. Note: This dish provides 25g of protein per serving through the synergy of chickpeas and tofu, offering a complete amino acid profile for a post-workout or high-energy breakfast.
Notes
Always add the kala namak at the very end of cooking, as high heat can dissipate its unique aromatic qualities.
For a drier scramble, cook for an additional 3-4 minutes after adding the soy milk until the tofu begins to slightly brown on the edges.
If you prefer more heat, bloom a pinch of red chili flakes alongside the turmeric and nutritional yeast.
