Method
Start your morning with this savory turmeric tofu scramble, a nutrient-dense staple in any vegan kitchen. By pressing the tofu to remove excess moisture, you create a firm texture that perfectly absorbs earthy spices and nutritional yeast. It is a quick, high-protein meal that pairs beautifully with fresh spinach and toasted bread.
Step 1. Begin by pressing your firm tofu for at least 15 minutes. This technique is vital because removing excess water allows the tofu to absorb the savory spices and ensures the final texture is firm and satisfying rather than soggy. Tofu is a complete protein source, providing all nine essential amino acids necessary for muscle repair.Heat the olive oil in a large skillet over medium heat. Add the diced shallots and sauté for 3-4 minutes until they become translucent and fragrant.
Crumble the pressed tofu into the skillet using your hands or a fork, leaving some larger chunks for a varied texture.
Add the turmeric and nutritional yeast directly into the pan. Stirring the nutritional yeast into the warm oil blooms the flakes, which deepens their naturally nutty and cheesy flavor profile while the turmeric provides its signature golden hue.
Pour in the soy milk and stir well. This adds a slight creaminess that binds the spices to the tofu. Cook for 5-7 minutes, stirring occasionally, until the liquid has mostly evaporated.
Fold in the fresh baby spinach. Continue to cook for 1-2 minutes just until the leaves have wilted into the scramble.
Turn off the heat and stir in the kala namak and black pepper. Using kala namak at the very end preserves its sulfurous aroma, which provides the characteristic savory depth of this dish. Serve immediately.
Notes
Do not over-press the tofu if you prefer a softer scramble; 10 minutes is usually sufficient for a tender bite.
For an even richer flavor, sauté a pinch of cumin seeds in the oil before adding the shallots.
Kala namak loses its unique aroma if cooked for too long, so always add it right before serving.
If the scramble feels too dry, add an extra splash of soy milk a tablespoon at a time.
