Step 1. Preheat your oven to 180°C (350°F) and line an 8-inch square baking tin with parchment paper.In a large bowl, whisk together the rolled oats, oat flour, baking powder, cinnamon, and sea salt.
In a separate bowl, whisk the ground flaxseed into the soy milk and let it sit for 5 minutes; this hydration period allows the flax to release its natural mucilage, which creates the essential structural bond for the bars without the need for eggs.
Add the mashed bananas, almond butter, maple syrup, and vanilla extract to the soy milk mixture, whisking until the wet ingredients are well-incorporated.
