This crispy baked tofu is a staple in any modern vegan kitchen, offering a meatier texture that absorbs flavors beautifully. By pressing the tofu and using a seasoned cornstarch coating, you create a protein-packed dish that stays crunchy. It is the perfect addition to your favorite stir-fry or grain bowl.
Step 1. Press the firm tofu for at least 20 minutes. Pressing is the most critical step because it removes excess water from the cellular structure of the tofu; this ensures the cubes can absorb the marinade and prevents them from steaming in the oven, resulting in a much firmer, meatier texture.Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.
Cut the pressed tofu into 1-inch cubes and place them in a medium mixing bowl.
Drizzle the soy sauce and toasted sesame oil over the tofu, tossing gently to ensure every side is coated. Let it sit for 5 minutes to absorb the savory notes.
Sprinkle the garlic powder, ground ginger, and cornstarch over the marinated tofu. Toss again until the cornstarch forms a light, even paste on the surface of the cubes.
Arrange the tofu cubes on the prepared baking sheet in a single layer, ensuring they are not touching so the air can circulate freely around each piece.
Bake for 25-30 minutes, flipping the cubes halfway through, until they are golden brown and feel firm to the touch. Serve immediately while the exterior is at its maximum crunch.
Notes
For an even chewier texture, freeze the tofu block in its packaging, thaw it completely, and then press it.
Do not skip the oil; it is necessary to hydrate the cornstarch so it fries against the heat of the pan, creating that signature 'crunch'.
Ensure the tofu cubes are uniform in size to guarantee they all finish cooking at the same time.
