Method

  1. This hearty vegan shepherd’s pie is the ultimate comfort meal for any night of the week. We combine protein-rich lentils and savory root vegetables under a golden layer of creamy garlic mashed potatoes. It is a wholesome, plant-based classic that brings satisfying depth and warmth to your table.

Step 1. Place the chopped potatoes in a large pot of cold salted water. Bring to a boil and cook until fork-tender, about 15-20 minutes. Drain and return to the warm pot.

  2. While the potatoes cook, heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the onion, carrots, and celery. Sauté for 8 minutes until the vegetables soften and begin to brown slightly.

  3. Stir in the tomato paste and cook for 2 minutes. We bloom the tomato paste here to caramelize the sugars and deepen the savory base note of the gravy, removing the raw metallic taste.

  4. Pour in the red wine to deglaze the pan, scraping up any browned bits. Add the rinsed lentils, vegetable stock, and fresh thyme. Simmer uncovered for 25-30 minutes until the lentils are tender and the liquid has thickened into a rich sauce.

  5. While the filling simmers, prepare the mash. Combine the oat milk, minced garlic, and nutritional yeast in a small bowl. Let the nutritional yeast bloom in the liquid for 5 minutes. This process hydrates the flakes, ensuring a smooth texture and a more pronounced, savory, toasted flavor throughout the potatoes.

  6. Mash the potatoes with the remaining olive oil and the oat milk mixture until completely smooth. Season with salt and black pepper to taste.

  7. Preheat your oven to 400°F (200°C). Transfer the lentil mixture to a deep baking dish. Spread the garlic mash over the top, using a fork to create ridges which will crisp up in the oven.

  8. Bake for 15-20 minutes until the edges are bubbling and the potato peaks are golden brown. Let sit for 5 minutes before serving.

Notes

Use Yukon Gold potatoes for the topping; their naturally buttery texture creates a much creamier finish than starchy Russets.

If the lentil mixture looks too dry before baking, add a splash more vegetable stock; the lentils will continue to absorb liquid in the oven.

For the best crust, use a fork to drag rough lines across the top of the mash; these thin edges catch the heat and become wonderfully crisp.

A note on protein: Brown lentils are the powerhouse here, providing 18 grams of protein per serving along with high fiber content, which ensures the dish is satiating without the need for heavy fats.

Questions

Can I use red lentils instead of brown?
Red lentils break down much faster and turn into a puree. For this recipe, brown or green lentils are preferred because they hold their shape, providing the necessary texture for a traditional pie filling.
How do I store leftovers?
Store in an airtight container in the refrigerator for up to 4 days. The flavors actually deepen overnight, making it a perfect meal-prep option.
Can I make this without the wine?
Yes, you can replace the wine with an equal amount of vegetable stock and a tablespoon of balsamic vinegar to maintain that acidic brightness and depth.
Why do you bloom the nutritional yeast?
Blooming nutritional yeast in warm liquid prevents it from tasting 'dusty' and helps integrate its savory, nutty flavor seamlessly into the mashed potato topping.
