Method
This vegan white bean minestrone is a hearty Italian staple that brings warmth to any kitchen. By toasting nutritional yeast with tomato paste, we create a rich, savory depth that elevates the broth. It is a nourishing meal that proves how satisfying a simple vegan soup can be.
Step 1. Heat the olive oil in a large pot over medium heat. Add the onion, carrots, and celery, sautéing for 6-8 minutes until the vegetables have softened and the onions are translucent.Stir in the minced garlic, tomato paste, and nutritional yeast. We bloom the tomato paste and nutritional yeast in the oil here to deepen the flavor; the paste caramelizes and loses its raw edge, while the yeast toasts to provide a savory, nutty foundation that mimics aged cheese.
Add the dried oregano and a pinch of salt. Pour in the vegetable stock and bring the mixture to a gentle boil.
Stir in the cannellini beans and ditalini pasta. Reduce the heat to a simmer and cook for 10-12 minutes, or until the pasta is al dente. Note: The combination of white beans and wheat pasta provides a complete amino acid profile, making this a highly efficient protein-based meal.
Toss in the shredded Tuscan kale and stir until wilted, which should take about 2-3 minutes. The kale adds a pleasant bitterness that cuts through the starch of the beans.
Remove the pot from the heat and stir in the fresh lemon juice to brighten the flavors. Season with additional salt and black pepper to taste before serving.
Notes
For an even creamier texture, take half a cup of the cannellini beans and mash them with a fork before adding them to the pot.
If you plan on having leftovers, cook the pasta separately and add it to each bowl to prevent it from soaking up all the broth in the fridge.
Always bloom your dried herbs and tomato paste in the oil before adding liquid to unlock fat-soluble flavors.
