Transform a block of tofu into a tangy, salty staple for your vegan kitchen with this simple herb-marinated recipe. Using white miso and lemon, this dish provides the perfect savory punch for salads or mezze platters, ensuring every vegan meal is packed with bright, Mediterranean-inspired flavor and satisfying texture.
Step 1. Press the extra firm tofu for at least 30 minutes. Pressing the tofu is essential because it expels the neutral-tasting water trapped in the soy protein matrix, creating empty space for the tangy, acidic marinade to be absorbed deep into the core of each cube.Cut the pressed tofu into 1/2-inch cubes and place them in a glass jar or a shallow airtight container.
In a small bowl, whisk together the lemon juice, apple cider vinegar, white miso paste, nutritional yeast, dried oregano, extra virgin olive oil, and minced garlic until smooth. The white miso provides the foundational saltiness and fermented depth that mimics a traditional brine.
Pour the marinade over the tofu cubes, ensuring every piece is well-coated. Seal the container and gently shake to distribute the liquid.

Notes
